I've choose this bootscreen with the Star Wars sound. But it appears in red instead of white.

The images are monochrome, because there isn't enough memory in the radio to store full colour images. Hence the current theme settings will apply to the image

So it's because of the theme then. Could I change only the boot color font in settings?

Hola buenas ahora que tenemos el baofeng 1701 con pantalla a color no es posible enviar un logo a color

Hi.

Don't wonder about the question, I am blind. I would like to know wether its also possible to put ASCII art instead of a picture by chosing a text startup screen?
And if yes, how large is my drawing field in letters, characters times lines? Are there limitations regarding the character pool from which to chose individual sigens?

No, not pure ascii art, as you can only display 2 lines of 16 characters.
But, you can make an image with rendered ascii art.
