That's true, but why does 100% have to be at 8.1 volts?
Isn't that a bit too high for a 7.4v battery. Wouldn't it be better to display 100% from 7.6-8.1?

Because the measuring circuit is really not accurate (I have one GD-77 which never display 100%, despite of the voltage).
Anyway, the battery calibration has just an impact of the reading, the charding circuit is independant.
So, you need to measure on the real value of the battery, and adjust that calibration value to match the reality.
